I have been quite the blogger slacker! I started this blog in hopes to share with you all the healthy, delicious foods I’m eating to stay balanced and motivated.   I started school on the 22nd and it’s going to be a tough semester! I’m taking First Aid & CPR, FCS, and CHEM 111! Chem 111 will not get the best of me! Bring it on Chemistry! I find if I have a bad attitude or a poor mind- set, I usually fail or get lost in the feeling of frustration.  Instead, I focus on the positive and it makes life a lot simpler! I find I also do better when I change the way I think about certain situations.  Try it for yourself!  Go in with a winning attitude and you will see that life is a lot less painful!  

In other news, I participated in the Owatonna Rotary run last Saturday.  It wasn’t my greatest run! It was a 4 mile run and I finished in about 33 minutes.  I had the worst stomach all morning, but I decided to give it a try anyways!  You would not believe some of these runners, there was a runner who finished in 21 minutes.  There were a couple runners who were qualifying to go to the Olympics!! How impressive!!!  I took a few pictures which I will put up later tonight!

I will start posting more food and recipes this week as well!!!

Hello Everybody!!!

Hello foodies and fitness fanatics!!!! My name is Amanda and I am from the great state of Minnesota!!!  Why a blog you ask? The reason I started my blog is to put all my fitness goals and health goals out there for the world to see!! I began my weight-loss transformation a good five years ago.  At first, it was about self-esteem and about how I looked on the outside.  I was in the gym on the elliptical or doing circuits 4 to 5 days a week.   I started seeing changes and managed to lose 40 pounds and keep it off for three years now.  I started to notice the determination I had and what I had to offer the ones around me.  I knew I had to make the way I was living a lifestyle.  I love the way I feel when I am healthy and strong.  At the time of my transformation, I was in college for Criminal Justice.  I then decided to change my major from Criminal Justice to Nutrition.  It was the best decision I have made thus far. 

I want to share with you the knowledge and facts I live by! I want to bring you on my journey through finishing up my Bachelor’s degree.  I will share with you my fitness goals, healthy recipes, and everything in between!!
